The Balsamic vinegar is born by the passion of Annalaura for this product and it’s a mix of Sagrantino grape juice boiled and Grechetto grape vinegar.
The juice of Sagrantino grapes is boiled for 48 hours until is reduced of about 50 %. After to this, it’s added the vinegar of Grechetto Grapes and then the whole is aged for over 17 years in little kegs of decreasing capacity in five different essences : oak, ash, mulberry, chestnut and locust-tree, to favor the concetration of mass and aromas. Every year a little bit of the sauce is taken from the first and biggest keg and put in the second keg and so on until the last keg of 10 liters where is taken the best sauce for the bottling to a maximum of 2 liters.
It’s a dressing perfect for vegetables and fruit salads, grilled meats, cheeses and vanilla ice creams or to cook with roasted vegetables.
